Pumpkin Juice

I’ve always loved Halloween. When I was young, I enjoyed dressing up and trick-or-treating. When I was a teenager and young adult, I enjoyed dressing up and going to Halloween parties. When my kids were young, I enjoyed dressing them up and taking them trick-or-treating. And now that they’re teenagers, I enjoy watching Halloween-themed movies with them.

This year, we’re planning to watch a Harry Potter flick or two, or three, or all eight. And in keeping with the theme, I’m going to make pumpkin juice. Loaded with vitamin A and fiber, pumpkin isn’t just tasty; it’s also good for you. Now, if only I could figure out how to make chocolate frogs that actually jumped!

Pumpkin juice

 

  • 4 cups pumpkin chunks (1/2 – 1 whole pie pumpkin)
  • 1 apple, chunked
  • 2 carrots, chunked
  • ¼-inch piece ginger
  • cinnamon
  • nutmeg
  1. Put pumpkin, apple, carrots and ginger through a juicer.
  2. Pour the juice into a large glass and add ice if desired.
  3. Sprinkle with cinnamon and nutmeg.
