If my kids had their way, we’d have ice cream every day. And when it’s hot and muggy outside, I feel much the same way. But sugar-filled ice cream just isn’t good for you.

Here’s a healthy substitute I found that satisfies the sweet tooth and the desire for something cold and creamy.

Frozen bananas are the secret ingredient. Bananas are a super healthy snack on their own. Because they are an excellent source of potassium, they help prevent muscle cramps. They are also a good source of a kind of soluble fiber called inulin, which helps you absorb minerals and feeds the friendly bacteria in your gut which boosts the immune system.

Add peanut butter to the banana, and you’ve got a protein-filled treat that keeps you from being hungry as well.

Faux chocolate peanut butter ice cream

 

  • 4 large bananas, sliced and frozen until solid
  • 3 tablespoons cocoa powder
  • 4 tablespoons creamy natural peanut butter
  1. Put half the bananas into a blender. Add cocoa powder and peanut butter and top with the remainder of the bananas.
  2. Secure the lid and slowly pulse the mixture, stopping to scrape down the sides as necessary.
  3. When the mixture starts to become creamy, begin doing longer spurts of blending until the consistency of soft-serve ice cream is reached.
  4. Serve immediately if you want the ice cream in “soft-serve” form or freeze in an airtight container for up to 5 days. Freezing it gives it the consistency of regular ice cream.
