I crave pineapple. I only have them a few times a year and spring and summer see me preparing my favorite pineapple cucumber salad often.

Some people shy from pineapple because it has a lot of sugar. But remember, all fruits contain sugar. But unlike processed foods with added sugars, fruits contain proportionately more soluble fiber than sugar, so they don’t raise blood sugar as much as grains and refined carbohydrates do. Plus, you’ll get a mega-dose of immune-boosting vitamin C, a generous amount of B12 and B6, even some magnesium. So you can feel guilt-free about this cool, sweet salad.

Cucumber and cilantro give it a cool, crisp feel. All and all the flavor combination is unlike any other salad I’ve had and anyone I introduce it to becomes a life-long fan. I’m sure you will too.

If you are uncomfortable dealing with a whole pineapple, substitute canned pineapple.

Pineapple Cucumber Salad

 

  • 1 pineapple, chopped
  • 1 cucumber, chopped
  • 2 limes, zested and juiced
  • ⅓ cup of cilantro, chopped
  • Salt and pepper to taste
  1. Combine all ingredients and toss lightly to distribute the lime juice and zest evenly.
  2. Season with salt and pepper if desired.
  3. Serve immediately or keep chilled until ready to serve.
