During my latest trip to the farmers market I grabbed a huge basket of peaches. An older neighbor of mine said they should be just about perfect now — juicy and ripe — and I’ve been waiting for this moment all summer.

Of course I’ll make a chutney, but the first thing I did was use them to sweeten up a tall cold glass of green tea in this peachy green tea cooler.  You are probably well aware of green teas nutritional benefits as a source of antioxidants, but peaches don’t slack in health benefits either…

Peaches are rich in minerals such as calcium, potassium, magnesium, iron, manganese, phosphorus (the good kind), zinc and copper.

But I’ll be honest… this just tastes so good and refreshing, the health benefits are just icing on the cake.

Peachy green tea cooler

 

  • 6 green tea teabags
  • 6 cups cold water
  • 3 ripe peaches, pitted and sliced
  • Honey
  • 1 lemon, juiced
  • A couple of sprigs fresh mint or basil
  1. Bring 6 cups cold water to a boil.
  2. Place teabags and sliced peaches in a saucepan. Pour boiling water over the peaches and teabags. Steep for about 5 minutes.
  3. Strain the tea into a heat-safe pitcher and reserve the peaches in another container to place in the refrigerator. Stir in honey and lemon juice to taste into the tea.
  4. Allow tea to cool, then refrigerate until thoroughly chilled.
  5. To serve: Fill tall glasses with ice, place a few chilled peach slices in each glass, pour chilled tea over the peaches and top with a sprig of mint or basil.
