This recipe is tasty and healthy, and the ingredients are not expensive.

Tangy and refreshing, this salad makes for a delightful afternoon snack on a hot summer afternoon or a delicious accompaniment to grilled chicken, pork or fish. It features pineapple and cucumber, both of which my kids enjoy.

And I’m happy to serve them this healthy dish. Pineapples contain high amounts of vitamin C and manganese, which is important for antioxidant defenses. And because cucumbers are 95 percent water, they help you stay hydrated — that’s extremely important when you live in a hot, humid climate like we do.

And although broccoli and garlic are from better-known health food plant families, cucumbers have similar nutrients (polyphenols) that also stop inflammation, slow aging, and even prevent both heart disease and cancer. What could be better?

So this recipe is tasty and healthy, and the ingredients are not expensive. Adding Cucumber And Pineapple Salad to our repertoire is a no-brainer.

Cucumber and pineapple salad

 

  • 1 pineapple, chopped
  • 1 English cucumber, chopped
  • 2 limes, zested and juiced
  • Sea salt, to taste
  • Pepper, to taste
  1. Put pineapple and cucumber in a bowl. Sprinkle with lime zest and lime juice and toss gently to distribute zest and juice evenly.
  2. Season with sea salt and pepper to taste.
  3. Serve immediately or chill until ready to serve.
