Bacon-Wrapped Pineapple Bites

My oldest child is a high school senior, and he’s graduating in a few weeks. I wanted to get him something special to mark the occasion, and I was having a tough time figuring out what to buy. Then he mentioned that he wanted to see the Floyd Mayweather-Manny Pacquiao fight. So I ordered it on pay-per-view and told him to invite some friends over to watch it with him. I gave him a memory instead of a trinket.

I fixed some snacks, including Bacon-Wrapped Pineapple Bites. They were a big hit with all the kids, especially the boys. And I felt good about feeding them a healthy snack. Pineapples contain high amounts of vitamin C and manganese, which is important for antioxidant defenses.

A lot of people are angry that they paid nearly $100 to watch the fight because it didn’t live up to its hype. But that didn’t seem to matter to the group of teenagers gathered in my family room. They enjoyed good food and good company while watching what was for most of them, including my son, their first boxing match. And my sports-loving son will probably always remember that night. You cannot put a price tag on that. So for me, the fight was worth every penny.

Bacon-wrapped pineapple bites

  • 12 slices bacon, halved crosswise
  • 1 large pineapple, cut into 24 cubes
  • 24 wooden toothpicks, soaked in water for 1 hour
  1. Preheat oven to 450 degrees F.
  2. Wrap each piece of pineapple with a piece of bacon and secure with a toothpick.
  3. Arrange on a baking sheet lined with parchment paper and bake, turning once, until bacon is crisp, about 15-20 minutes.
